Like my Pumpkin Pie Energy Balls, this recipe was born with Raphael, a perfect postpartum snack. AKA when you feel like you only have one hand and are eating like a linebacker. These are nutrient-dense and delicious! And super easy. And they freeze well. Win-win-win-win-win! Mom-win for the win!
All you need is a food processor, the bananas you bought with great intention last week, a few pantry staples, and nap time.
Banana Chocolate Chip Energy Bites
Combine all ingredients except nuts and chocolate in food processor. Pulse a few times to break up the big chunks, then process on low until a thick paste forms.
Add nuts and chocolate and process a little longer until they are dispersed, but not too finely minced.
Roll into golf-ball sized balls. Cover and refrigerate for up to 10 days, or freeze for a few months. Enjoy right out of the refrigerator!
